white grape and cherry popsicles

We have a new obsession with homemade popsicles.  We got these popsicle molds, and we loved them so much we got a second set.  And then my mama gave us some of these silicone ones.  At first we just did straight up orange juice or orange-pineapple juice, both of which are delicious, but we wanted something a little softer.  Looking around and combining some ideas on the internet with what was available in our fridge/freezer, we came up with a delicious and relatively nutritious recipe (hey, it's better than kool-aid popsicles!).


Ingredients:
4 cups white grape juice
1 Tbsp sugar or honey
1 packet of unflavored gelatin (there are 4 packets in a 1 oz box)
1 cup pitted dark cherries (we've used fresh and frozen successfully)

Recipe:
1. Pour 1 cup grape juice into a sauce pan and sprinkle with gelatin.
2. Let gelatin sit one minute. Stir it in and cook to a boil.
3. While that mixture cools a bit, puree (in a blender or equivalent) cherries and remaining grape juice. Stir in the sugar or honey.
4. Mix together all ingredients.  Funnel mixture into popsicle molds, scooping off excessive foam.
5. Freeze 'em.  It usually takes 3-4 hours to fully freeze.  If you try to take them out too early the stick part won't hold onto the popsicle goodness very well, which is terribly sad.

This recipe makes about 8-10 popsicles. The gelatin in these makes them slow melt, making them great for kiddos.  Enjoy!
