Pumpkin Pancakes

I made these on a whim this morning, and I've decided it might be the best breakfast ever. Like, I think I would have this with turkey bacon for Thanksgiving dinner. Maybe...


Remember that trip to the apple orchard I just wrote about? Well, there's the apple butter and cinnamon honey we got- right there next to the best pancakes ever, because they are the perfect toppings.

Anyhow, we also picked up a pie pumpkin (those ones that are about 5"-7" in diameter) at the apple orchard. Last weekend I  took out the seeds, cut it into chunks, steamed the pieces for about 30 minutes, took off the skin, and pureed the steamed pumpkin. The puree has been sitting in my fridge all week waiting to be turned into a pumpkin pie, but I have more than I need for one pie. Hence, I went recipe hunting and found Pumpkin Pancakes. They are thick and fluffy, and most importantly they taste like Fall. I'm sure they'd be good with traditional maple syrup, but apple butter is a bit healthier and really delicious. And cinnamon honey? Seriously, you should go to Idalou, Tx just to get some of this stuff. Totally worth it.
